I've been looking at the same thing.
One option is to find a hotel that has a shuttle bus to KSC. If you want to 
spend the whole day there, you are going to have to travel in rush hour.
That way you can fly/drive into Orlando and all you have to do is wake up. 
Someone else takes care of the rest.

We are looking at doing this in Gainesville for the Gatornationals. We 
haven't sorted any place to stay yet, so if anyone has suggestions with a 
means of getting to and from the races, I'd appreciate it. 
Then we can pick up a car on Monday and start doing the other things on 
the list (like KSC).
