While an interesting idea, I believe the best way to approach it would be to use a packet sniffer, a regular NIC and a good book. Ethereal is an AMAZING packet sniffer, without it I wouldn't have been able to figure out anything ethernet/IP/TCP. As for books there are quite a few out there, there was a discussion on the list recently, the archives will give you a good selection of books to choose from.
