What's the disadvantage of having your pads be double-sided as well? By the time you pay for a double-sided board for the connectors, why not have double-sided pads as well? You can get to almost single-sided pads by setting the RESTRING parameters for the top (or bottom) layer to zero. Or, when you generate your gerbers, you can probably leave out the pads/vias for the top or bottom, if the only thing you needed on that layer was SMDs for the edge connectors...
