Xilinx has the PicoBlaze which is a nifty little microcontroller core, they have a larger pay-for microcontroller core. Altera has a free one too but the name escapes me. There are also "commercial" IP cores for just about anything you want, 8051, PIC, PCI-bus, Ethernet, CDMA and on and on and on. Have fun.
