Thanks for your help gentlemen.  I will make a go of it wiring the display
and rotary encoder with some cat5 cable, 74HC595, series resistors and 22pF
caps to ground, and might throw in some 5.1V TVS's in the mix.

Version two of the project will communicate remotely via RS-232 or 485, PIC
at the remote end of course.
