I've found some SMT LEDs to be pretty fragile and removing them in one piece is a lottery. Soldering one on by hand should go OK. The trick is to be focussed. You'll find that the smaller the part, the more you have to pay attention. Start with a clean tip and don't dawdle or try to rework it too much. The actual temperature of the iron isn't probably as important as making a good quick clean joint on one side. Apply a little pressure on the LED as you re-heat the joint so as to get it down flat if it isn't already.
