One guy I know does it using Excel !!! he puts a capital O in each cell, and colours each row a light orange to represent the copper strips. I think he then has thick line borders on the top and/or bottom of each row that are coloured white, to give the gap between strips. Where he wants to put a break in the copper he puts that cell back to the automatic background colour. He then uses the drawing tool to put in lines and components.
