One guy I know does it using Excel !!!

he puts a capital O in each cell, and colours each row a light orange to
represent the copper strips. I think he then has thick line borders on the
top and/or bottom of each row that are coloured white, to give the gap
between strips. Where he wants to put a break in the copper he puts that
cell back to the automatic background colour. He then uses the drawing tool
to put in lines and components.

All in all it works real well.
