There is nothing wrong with dividing the workload over a couple of
PicMicros. Although I am no mission-critical embedded application
specialist, I do happen to know that they split a lot up into small
dedicated parts when it comes to certain mission critical applications in
the field; like in modern jets (military and commercial).

There is nothing wrong with using something more powerful. This is probably
a perfect opportunity to get started on something bigger, badder and louder!
