Sure you can. The processor "suspends" operation for a short period, 
about 3mS
while it writes a word. Works good. One of my clients uses this feature 
to install
14-bit calibration tables for a load cell (measures force applied to a 
crane). Switch
to the 877 instead of 874 for more space.
