I just downloaded the TCP/IP stack fro ENC28J60 and it is interesting to know that C18 actually generates smalle hex file than PICC 18. This does not necessarily mean C18 is better than PICC18 but it seems to me that C18 is a better choice for your case since this stack may be more optimized for MPLAB C18 than HiTech PICC18.
