Wine runs fine on AMD64 if you have the 32-bit libs installed. Gentoo 
has an ebuild for it and it installas fine just as every other program 
(I believe it compiles it in 32-bit mode, and it simply uses the 32-bit 
libs).

A chroot is not really needed, as long as you have the 32-bit libs (in 
/emul).
