To incorporate this idea into your remark, I'd say that nothing can just change its specific heat unless it changes into something else, and that something else will have to give up the extra heat (or absorb the needed heat). Simple melting and freezing exhibit this, too. This will interfere with your predictions. Though, I am guessing the effects are small, because no one has mentioned this.
