FWIW I've done something similar (although it was mapping the pins of an EPROM from TSSOP to DIP, the pinouts were different, and there were quite a few wires, 32 I think). It took a while, but it worked fine for at least a few years. This is obviously not something I'd ever consider for anything beyond the prototype stage, but for that stage there's nothing wrong with it. For the record, the most I've done is hand wire two 100pin connectors to each other to match differing pinouts.
