I think many anti-virus and spam filter programs include a pop3 "gateway" of sorts, which can filter the pop3 requests of any program running on your machine. (AVG at least seems to have this.) I don't really know that much about this, because I don't use it that way (filtering happens on clients in my case). But I think this depends mostly on the anti-virus or spam filter program, and the thing is to find a combo that fits your needs and is possible to integrate with Hamster. In any case, you can custom script your own filters, if that's what you want.
