Actually you can only transfer registration to someone else. Legal ownership is dependent on "normal" conditions. (whatever they are). However, most people (and insurance companies) assume that if a car is registered to you, then you own it. The other thing is that it seems to be possible to change ownership details within one month of an official change of ownership by just phoning the licensing authority up & telling them there was a mistake. I changed 2 vehicles recently from single to joint "ownership" without having to supply more than very basic information. The insurance company then accepted that the cars are jointly owned and reduced the premiums accordingly (as was my intention).
