If you can use less than a full rotation you can make a spiral spring 
from piano wire and bend the last turn out on a tangent to catch a screw 
driven into the the pedal. This is what I used. The pot must be 
easy-turning. By adjusting the spring diameter various excursions of the 
potentiometer can be acheived (including non-linear cam if needed). 
Pliers work great for tuning.
