These's usually a 'Merge & Center' button on the toolbar. A surface map is like a topological map, a high value creates a peak, like a mountain peak. The default surface chart is 3D, there is another one that is viewed as from above, and results in a contour map (ie flat). Colours still represent different 'heights', or flow in your case.
