Neil, have you considered just controlling the temperature of an oil bath with
a good PID temperature controller? You can often get stability within
a fraction of a degree, then you just have to wait for your probe to
settle out.

In keeping with the toaster-oven SMT, maybe stick a better controller on
an old deep fat fryer? ;-)
