the ADXL acceleromiters from AD are really nice in terms of interface straight into the A/D converter 0-5v range, simple SW noise filter would suffice use a smaller PIC with their digital PWM style output perhaps PIC10F + acceleromiter (keep in mind you get to quote bulk prices in your "final product") + siren (or use the horn and indicator lights) and link into the cars existing door open warning system.
