Just google on "pc data acquisition" or pick up any copy of Circuit
Cellar, Nust&Volts, etc.  There are many vendors.  Just what type of
environmental conditions are you talking about?  Another option might
be to use an old Palm Pilot -- again, very cheap, very reliable, and
very fun to program.
