This is kind of similar to my ink idea. I remember when I was young they used to sell this liquid (blue or red) that you splash into other's clothes, and it will make a huge mess, and after a while it would evaporate without leaving any residues... it was very funny, people used to get very mad at me. In the simulator, one of the parameters that may vary is the evaporation time. In your water example, that could be easily obtained by just replacing the liquid by alcohol or even benzine (although the last one may have some undesireable effects on the observers).
