In Britain you can look for the mark of the Soil Association: http://www.soilassociation.org - it's not government sponsored or controlled - they are an independant watchdog whose aims I rather happen to agree with (and I'd guess you do too!). I also buy only Free Range eggs... Incidentally I was surprised to find that in New York (at least) eggshells are pure white - they very rarely are here, but are all shades from pale blue (though you have to pay extra for these :-) through beige to almost orangey-brown.
