I think a poster would be an excellent idea! EPE magazine puts out posters from time to time, but I don't think they've ever done a PIC one. Rather than die photos, my vote goes for showing all the things that a beginner would want to look up most often - the instruction set (with the flags affected and so on), the Special Purpose Registers of the various ranges, the pinouts of the most common groups of DIP PICs, the data / program memory paging / banking, and something I always thought would be a good thing: a more easily read chart of what are the various functions of each pin.
