I learned most of the basics from Predko's "Programming and Customizing PIC Microcontrollers", and found it to be very instructive. I never built the el-cheapo or installed any software. It took me from knowing nothing about microcontrollers to understanding most of the basics pretty quickly. I never tried to use any of the code, but rather just read it for understanding then moved on. I agree datasheets are the best reference, but for the uninitiated they are pretty intimidating.
