I'm designing my own supply. So I was hoping to find just the hot-swap
enclosures. Haven't found anyone that sells just the enclosures yet.

Did find this company Unipower Telecom that has a nice 1U unit that I
might be able to use. Here's the like if anyone else is interested:

ASTEC makes these for HP, 3U high.
But of course, you have left this pretty open on input voltage, output
voltage, etc

Start with the power supply, is it something you are designing or off
the shelf? If COTS, then ask the vendor if they make a rack mount power
shelf.
