It seems to me you might be better off with somehting like a microATX or
miniITX board with a low power processor and interfacing your sensors to a
serial or parallel port and write a bit of software to do whatver you want
it to do, it is quite posible that the video capture board will output an
mpeg encoded stream and i have no idea what the input to the video out
would be in which case there is no way a pic will manage it. miniITX has a
graphics card with s-video out, processor and sound card all soldered to
the board which is about the size of a CD case, check out
