The earlier DeskJets took a sort of watered down version of PCL, but at least the manuals included the protocols. The newer DeskJets take PCL 4 or 5, sometimes "modfied", but as best I can tell, it's tough to come up with the docs. The PICLIST archive seems to have one of the best descriptions of PCL around.
