Check out www.phidgets.com, particularly the PhidgetInterfaceKits. Yes, I did some contract stuff for them so I'm a bit biased, but the PhidgetInterfaceKit (8/8/8) sounds like it'd work for you. It's a general purpose I/O board that connects to USB (8 analog inputs, 8 digital inputs, 8 digital outputs).
