I use Power FETS a LOT!
You seem to be unsure...
Take heart, they DO work reliably.

You may experiencing the effect of the high input impedance of the gate.
Your "oscillate" mode IS an artifact or YOUR not doing something right.
Without more details, I can only speculate.
