How about emulating a picMicro :-) A couple of cool things about this are the price, the ARM7 processor (one of my favorites), the fact that eCOS has been ported, and the LCD display capability. Not to mention the availability of development tools. And did I mention price? You would be hard pressed to find another ARM7 development platform for $250 (Xport + gameboy advance) with the same features.
