The output of the detector can, for the most part, always be amplified by external circuitry. The big thing is how much resolution do you want this thing to have? The Smaller your detector and the larger the number of them the better resolution you will have, but the more irksome the design will be. So you need to figure out what size area you want to detect the baseball hitting. Then you can look at how much area that various Piezo sensors will cover and figure how much overlap the detectors will have and do some sort of coincidence type measurement of which sensors give a signal when they hit a certain area.
