While I agree with the other's that learning C for the PIC is best done after you have a foundation in C, there are some books that do deal specificly with the various variants of C for microcontrolers. When I first started with PICs and C I refered to that book more than to the compiler manual. It's kinda old now (pre-windows), but I first learned C from a book called "C programming using C++" by the Waite Group. Excelent read, I still keep it on my shelf.
