I believe a human's clock speed is more than that of a PIC, 40mph might be a bit too much to expect ;-) Wasn't it Tony Nixon who was controlling (real) automobiles with a microcontroller? You'll need position feedback continuously, ultrasonic sounds like a headache to me. Especially if you have more than 1 car on the track.
