I did something similiar a while back. Basically I injected an analog signal into the transmitter pots (they were wired as votage dividers) that corresponded to the servos that I wanted to control. I used a phone jack wired in such a manner that it would disconnect the wiper whenever my signal was present, ie the plug was inserted. If I ran into trouble, all I did was pull the plug and I had manual control again.
