When I had an undocumented 4x40 display (2 44780 chips) I got the pinout
for the 44780 chip and used an ohmeter to determine which wires
connected to which pins on the connectors.

The 44780 chip document is not easy to get, but a good search will find
it for you.  I think I actually used a later version of the 44780 chip's
document...
