The reason I ask is that I thought that capability was standard on all email clients. In Eudora, for example, all I have to do is block select the text, then press Ctrl Shift (period). This shifts the selected text over (re-wrapping if necessary), then prepends each line with your email client's quote character. The converse works as well: block selected quoted text and pressing Ctrl (period) removes one level of quote marks.
