An idea: try to send yourself a message after changing your family name
spelling to K"ubek (including in the identity in your email client). If
this won't set the quoted-printable thing then you have a way to send mail
that won't have -.. set. There is even software that turns the ue in
K"ubek into a proper ue (like emacs for example) at the client's side.

Otherwise, what server do to your message is out of your hands.
