Hi, I checked a catalogue of replacement parts
for appliances, there are a few thermistors for
ovens, mainly microwave convection ovens (SHARP
smart ovens etc).

Sharp Thermistor; (similar TO-3 mount)
FH-HZA 011 WREO   (about $5 USD in singles)

This should be suitable for all typical oven
temps up to 220'C, but sorry I don't know what
resistance/temp curve etc. But unlike the diodes
this SHOULD be reliable for long term oven sensing.
