I don't know about Olimex, but most board houses charge a flat fee for a reasonable number of drill sizes (like 5 - 10). Even so, it's hard to imagine that the few pennies they might charge for an extra drill size is worth the loss of plated holes and hassle of having to drill the larger holes yourself. However, if that's what you really want, then it's very easy to do with Eagle.
