Look for Alps and other motorized potentiometers. They have a friction
clutch that allows the user to move the control by hand. They are usually
built for audio so log (A taper) but expensive N-switch and linear switch
units should be available. Probably <$10 each in ones (the inexpensive
log/log ones).
