Have to skun it , (soak in bucket of salted water overnight, helps get any worms or other parasites out also helps make it tender). Then give it a good wacking. Roo is usually used for pet food here. Even though lots of it seems to get exported to Germany as well as lots of wild pigs(the meat). Need a decent beer to go with it though, none of that piss weak US crap. :-) Either a good OZ , UK , Canadian or Dutch brew. Emu is over rated. Unless you like eating game birds. Camel is good eating if done right. Seen lama steaks for sale in the South Highlands(just south of Sydney) rather expensive at $50(Aus) a kilo. IF you ever visit Oz find a restaurant called Jurassic roast (if I remember the name right) Or was the the name of the dish. Get the leg of Camel!! Dam good. They even encourage you to pick up the leg and eat like a cave man. Snake tastes just like chicken (pretty close). Haven't tried croc yet, told it again tastes a bit like chicken. Had a mate who tried wombat reckoned that tasted pretty bad, but then again he said it was fresh roadkill. MacDonalds were supposedly using Water buffalo here for a while.
