NiMH are generally manufactured in smaller sizes, then combined to make larger voltages/currents. Even if you did find a single cell that can provide over 5Ah of energy it would be significantly cheaper (while heavier and using more volume) to use several smaller cells to make up that storage. Also keep in mind that as they charge and as they discharge they generate heat. A larger cell is going to have a harder time dissipating that heat than several smaller cells.
