Start with IIC because it is relatively simple and you can get cheap off the shelf slave devices. Microchip has an appnote if I remember right that is sort of a IIC tutorial. Look on the net, there should be lots of info there. The PIC data sheet for a part that has a MSSP, like 16F876 for example, also describes what happens on the bus. If the goal is to lear, then start out programming a master yourself by directly wiggling I/O lines.
