A 16FXXX PIC can sample one channel at about 40KSPS (kilo samples per second) IIRC but maybe the 18FXXX could do it faster. Hundreds of KSPS designs involve external DAC and memory but actually isn't that difficult to do. Take a look at www.bitscope.com. I have one and I'm very happy with it. A good software for it can be found at www.scopal.com. Take a look at PICLIST arquives. This was already discussed here.
