Again - the 'cut' relates to way you *intend* to use the crystal - if 'cut' for parallel use and used in a serial resonant circuit the freq will be off ... The oscillator circuit the crystal is used in determines whether the 'series mode' or 'parallel mode' of the crystral is made use of - they are *still* both present as far as the crystal is concerned - but it's the osc circuit that makes use of one or the other.
