Cannibalize a bimetal thermostat from a clothesiron or washing machine
(has remote sensing bulb). This will fix your problem immediately.

A good quality thermostat is overkill if you do not decide what part of
the box you want to measure or if you do not have foorced circulation to
keep everything at the same temperature.
