I know I can switch the main transformer but if I have many letters or sign
on the neon sign so I need many transformers while one transformer can give
selected HV to each letter in sequence.

20kV x 10mA = 200W right ?
switch the primary of your HV transformer, coil etc using a zero cross
triac firing ( up to 600V/10A )
