Hmm, snowstorms made me think about this for a while and I came up with a simple solution to players wearing green- what if you were to use an IR camera in addition to the camera the 'audience' sees.. that way the coloured overlay could be restricted by not only the green of the grass, but the temperature of the object, and in the case of grass vs human there would be a significant enough difference to be able to decide whether the green belonged to a persons outfit or whether it was organic.
