I don't think any team would use green uniforms because it would make it too hard for the players to spot each other. The players want to contrast with the field, and that happens to work for the video processing too. I friend of mine does something similar for Grand Prix racing. They put up billboards that are painted flat green. They can then superimpose advertisements on the boards when they are seen in the video.
