I politely tell the new/prospective/rushed customer that the other guy has priority because I won't slip the job. Most of the time they respect that, assuming that I would of course give them the same consideration. If they're in a real rush and I know I'll have to sideline my OWN plans, I'll charge a little extra as a PITA adjustment and spouse calmimng measure.
